Mediterranean Chicken: Quick, Simple And Delicious

Ever since PK bought me a Pressure King Pro for Christmas it is rarely off in the evening, which has lead me to concoct a load of my own recipes that I’ll be sharing with you on here regularly.

Today’s offering is my Mediterranean chicken that I literally threw together as I went along, luckily it turned out delicious.

It is cheap as chips and incredibly easy, perfect for those with limited time.

This will quite comfortable serve four, if not five (my appetite is ridiculous so adjust accordingly).

As there are only two of us, providing I have not been up for seconds and thirds, there is a nice portion each for lunch the next day or for the freezer for a CBA day.

How to make Mediterranean chicken

Ingredients

  • 12 Chicken drum sticks
  • 1 Tin tomatoes
  • 1 Onion
  • 3 Celery sticks
  • 1 Pepper
  • 1 Box of mushrooms
  • 1 Pack of baby corn
  • 3 Tsp tomato puree
  • 2 Bay leaves
  • 2 Tsp garlic powder
  • 2 Tsp oregano
  • 1 cup of chicken stock

Mediterranean chicken is quick, simple and cheap as chips to make. I use a Pressure King Pro to make this, but you can use any pressure cooker, slow cooker or even in a large pot slow cooked in the oven!

Method

Chop up all of the veg.

Add your tinned tomatoes, tomato puree, garlic powder, oregano and bay leaves into the pressure cooker.

Add the chicken next, then the veg and pour the stock over all of the ingredients.

Pop the lid onto the pressure cooker and cook on stew setting for 25 minutes.

Serve with sweet potato mash.

Final word

This has quickly become a firm favourite at Thrifty Towers due to it being so cheap and easy – even more so if you manage to pick up reduced chicken!

You don’t have to use all the ingredients mentioned above, they came about as I wanted to use stuff up in the fridge that would have gone off otherwise.

If you don’t own a pressure cooker you could slow cook it in a slow cooker, or in a large pot on a low heat in the oven.

The Pressure King Pro I use isn’t cheap to buy, but you certainly get your moneys worth out of it.

However, I have found a couple of cheaper alternatives if you can’t afford that sort of outlay which you can find at the bottom of this post.
