I was getting a bit bored of breakfast and anyone who knows me will know this simply isn’t on – I love my breakfast!
I have been cutting out bread a lot lately and I’m finding I’m starting to crave it again – thank goodness for Omelette Tartine!
There really is something about this moderation thing I should probably get on board with!
To be honest, you could make this a lunch time meal too, it is simple to make, super healthy, and very tasty.
Best of all, it’s very cost effective to make and is a great way of loading yourself up with plenty of fresh veg.
You can alter the ingredients according to your taste, as with a lot of my recipes you can use this to use up random bits of veg in your fridge to help you annihilate food waste and save you pennies!
How to make an Omelette Tartine
This should feed four if you’re just having the one slice. I have to admit, I eat two, but I have an enormous appetite!
- 1 tomato
- Four or five mushroom
- 1 onion
- 1 pepper
- A good handful of spinach
- 3 pieces of bacon (or ham if you prefer)
- 3 large eggs and a splash of milk
- 4 pieces of thick sliced wholemeal bread
- Salt and pepper to season
Chop everything apart from the bread!
Throw it all into a pan and fry (Fry Light for Slimming World members) until the bacon is cooked and the veg has started to soften.
Cut out a hole in the slices of bread leaving a small rim. Keep the piece you cut out.
Whisk the eggs (seasoned with the salt and pepper) and add a splash of milk.
In a different pan place a piece of the bread and add 1/4 of the bacon and veg mix then pour over a 1/4 of the whisked egg, cook for a couple of minutes.
Pop on the piece of bread you cut out like a lid, and flip the whole thing and cook for another two minutes then serve piping hot – Omelette Tartine DONE!
This is without doubt my favourite thing to eat at breakfast right now.
I loved it so much I tried it out in my cafe on a few of my regulars and it went down a storm.
Needless to say it is a permanent feature on my menu now.
Don’t feel like you need to stick specifically to the ingredients I have listed above, you can pretty much throw anything into it and it will still taste great.
